1/3 cup sea salt
1/4 cup honey
1/3 cup soy sauce ( or teriyaki sauce)
1 Tbs crushed red pepper
Mix all together in a large zip-loc bag, add fish (up to 4 filets) close bag and let stand in the fridge for 2-4 hours, turning bag every now and then to make sure all the meat is exposed to the mix.
Remove fish, rinse lightly,or just pat dry with paper towels.
Place on racks in smoker, drizzle with honey, smoke slowly until done to your preference and enjoy! wink
