My fillets stick to the racks after smoking in my Little Chief. I've done the Pam thing and that's works fine if the racks are clean, but I'm lazy and don't like to do much more than knock the big stuff off the racks with a wire brush, and I'm right back at it. The problem with not cleaning the racks each time is that the fillets stick to the racks, so I made this tool to remove the fillets....it works great. I just hook the stainless steel hook around the rack rods one at a time and pull...the fillet falls right off without losing any skin and without cracking the freshly smoked fish.
