Thanks, Twitch. I can certainly see how it happened now. Slab is right; you can generally de-seed an avocado by gently thumping the seed with the business end of a blade (a heavier chef knife works best) and twisting. However, especially in foodservice, where you don't always get to hand-select your produce, you sometimes run across avocados that are less than ripe, and the thump and twist does not work for those, so you are left with no choice but to cut around the seed as best you can and extract it. I have stabbed myself doing that before, so I can relate.
