I use turkey necks for bait. I've found that they don't fall apart as quickly as turkey/chicken legs so the bait stays intact longer.

About 15-30 feet is how deep I go. Just make sure you don't drop your traps in a place with too much current or else you'll find your traps a long way from where you dropped them, if at all.
