Why do you think they are whitefish?

The mountain whitefish in the rivers are OK eating. Some love them. Especially smoked.

Not sure about the lake variety...

But just be sure you aren't dealing with squaw fish \ northern pike minnows and eat one thinking it is a whitefish...
