My reaction to this thread is sorta like a quote from Charely Papaisian (nationally famous homebrewer and author) when somebody asked him what is the best beer in the world. His response: "The one in my hand!"

It is a rare day that I have the choice whether to eat Chinook, sockeye, coho, pink or chum. There is usually only one choice that day. As in, I caught a nice springer this morning, or my wife picked up a sockeye at Freddies, or my buddy has some extra coho which he wants to trade me for some homebrew. Whatever salmon I have at the moment is great. Otherwise, I'm eatin' chicken for dinner. Or pork chops. Or pasta. Or whatever. But nothing beats salmon, no matter the species, no matter where it came from, and no matter who caught it. As long as it's been properly cared for, I'll eat it without any complaints.

Other folks might be picky about their salmon, but not me.
