Of course this is not hard and fast, but it may be of some general use. It's taken just from my experience and journals:

John's Creek- right now through about the end of the month (this is a really fun fishery, but stay away at low tide);

Kennedy Creek - from about the middle of October through the middle of November (watch the mud);

Hoodsport - (Keeping in mind that the best Chum day I've ever had there was September 29, two years ago) sometime about the last week in October, through about the third week in November. Call the hatchery (360) 877-5222;

Chico Creek - about the same as Hoodsport;

Potlach - about the middle of November (or when Hoodsport starts to peter out), through the first week (maybe), in December (this is a short run);

Nisqually - (these are, by the way, the best Chums of the bunch, in my opinion), sometime about the end of November until, maybe, about the first week of January. They don't always come back in good numbers, but when they do, it's a real hoot.
