I've caught Golden trout....had to hike a long way to do so.

My list is short: Lake Washington sockeye again (knowing our WDFW, it'll probably never happen)

I've been fortunate to have caught almost all of the above North American species, save a couple of the extreme outlier trout species (Gila & Apache). I checked off a bucket list fish last week. A keeper Ling. I've caught many non-slot sized Lings in the past, but never one for the cooler.

My list:
20 lb. steelhead [ foul ]
Rooster
Grander Blue Marlin
Peacock Bass
Golden Dorado
Arapaima
Payara
Sturgeon
Artic Char
Taimen

I'm sure there's more, but the above list should keep my busy until my end days. If I have one more 20 lb Steelhead caught directly behind me in the slot I'm going to lose it. Fuckin' Rico! grin

PS my favorite all time fish to catch will always be the Colorado Greenback in the exact headwaters were they found the last remaining pocket of Greenies post "extinction". There is truly no better fish on this planet than a high elevation 8" Greenie that took your home spun Elk Hair Caddis from the Elk you took the previous fall. I'd rather catch one of those fish than any 20 lb SH or Grander Blue. It's as close to heaven as I've found.

Yeah, my idea of heaven is one of those native fish (I lean to trout) in their native water on a fly I tied. Net, photograph, release, and repeat.

Would add that it was really exciting to get a spawning male Arctic Char last fall. While I adore cutthroat, the char (at least Brookies and Arctics) do color up well for spawning. My wife caught a male brookie in Joffe Lake in Yellowstone that was way beyond any highly colored example I'd ever seen. Talk about eye candy.

As stoopid and silly as this sounds, this would be my bucket list as of today:

Durado (any)
Halibut over 100 lbs
King salmon over 70 lbs (in river)
King salmon over 40 lbs (in the salt)
20+lb coho (chrome to chromish. Not hooked nose fire engine red)
Roosterfish from the shore
1,000+lb. tuna (any species)

Since I've already pulled off the 30lb. steelhead thing, might as well shoot for a new state record steelhead. Unofficial, of course, as it would be a monster wild fish and just taped and released.

Maybe swing a smallmouth vagina on the surface and I'll bite.
Save the dicks for when Dan fishing is open. Or if your ever hungry and forget your lunch you could snack on a couple of those dicks.
