I have cleaned and cooked a few salmon from the Chehalis recently and have noticed on two occasions a couple of white egg type subtances imbedded in the meat, they resemble salmon eggs in size but are white with liquid inside. The eggs shapes are near the backbone upper rib of the fish. Any idea's
The last fish I cleaned was a male coho, I have also found them in kings.

Fat? I wouldn't think fat would be up that high on the fish, though.

Some kind of parasite is my guess. Just slice them out and shouldn't be a problem. I'll ask around to find out what kind but cooking will take care of them.

My wife bit into one while eating and thought I had left a white fish egg in the fish, they look like a pearl but they have
liquid inside and are self contained. I found two in a section of meat from a 7# coho
and one from a 28# king. Maybe it is from something the fish pick up while swing in a polluted river ?
