I am just wondering if one should eat a spawned out salmon? I saw some this weekend that had lost a good portion of scales around their dorsal fin and one swam past whose head was completely void of skin. Are these good eats? I wouldn't think so but I don't know so any info would be great.

I only eat salmon swiming UPRIVER not down. When a salmon enters fresh water their feeding shuts down and they get ready for spawning. Sure they will strike at lures and you can catch them on bait BUT after the salmon has been in the river so a period of time the flesh becomes white. ALL the nutrients are gone. I strongly urge you to pass up the SKELATORS and try to catch fresh fish. You sound like a beginner who is frustrated on trying to catch anything.

Void of skin? Ick. If they are to that point they are way past eating. Let 'em go. Too many times I've heard "they're good if ya smoke 'em." Well, pretty much anything will taste edible when you soak it in brine for a day and then bake it in smoke.
