Anyone here ever smoke any bottomfish or ling, and how do you like it?
I'm headed to Neah Bay for next week and have been toying with throwing in the smoker to try some.
Wondered if I'd just be filling up space in the camper... or if it's a good idea.
One's I'm thinking of are the black sea bass.

I tried it with flounder, but with their weird body configuration it was kinda hard to get my lips around their butt when I tried to light the head..... Ha Ha!!! Just couldn't help myself there.... eh hum.... Really, I am sure it would be good (Love smoked sturgeon), but I am SOOO fond of deepfried bottomfish that I just wouldn't "waste" them by smoking... Could be wrong though... MC

I will say this....if you are going to go to to the trouble of chopping it, have the decency to put in a zig-zag.

I enjoy smoked black cod but they are a very oily cod.I have never tried smoking sea bass or the rock cods around here. I bet you could make some good fish sausages or smoked fish loafs though.I even have a recipe for a fish bacon that I suspect would be very good.I think I will do a little experimenting myself.I will get back with you and let you know. As far as ruining my choice bong water with dried fish I do not know

Grandpa,
I didn't know you were into the illegal use of fish. Most people consume them in legal manners, but every once in a while a fisherman goes bad.... and goes over to the dark side.
I support the legal use of fish and think we should start a fish festival to show all possible applications for fish.
In fact I plan on having my first demonstration this next week over in Neah Bay. I'm bringing along two different fish cookery books. Upon returning to Kirkland with my booty/bounty (whatever), I will conduct some home smoking operations as I've heard that smoked bottom fish isn't that bad. I have wondered about the oil content and wondered how much that would matter.
I have heard from some sources that if one continues to use fish in the manner you advocate that eventually that user is found loitering in front of sporting good stores and frequenting the sale aisles of said stores.

I've never treid smoked Ling. I have smoked up some sea bass. Used the same brine as I use on Salmon. Turned out great. Just be careful to not dry it out to much while smoking it.
