Only words of wisdom I can offer are these.... TANDEM MAN!!!!
If you ever have a tire blow on a single axle trailer (especially if behind a small SUV), it can whip back and forth so violently. I saw a rig flip over one time before the trailer detached .... Tandem is not the same... I had a tire blow on my 26ft sled one time and I didnt even know the tired had blown till I stopped at the rest area.....

Tandem!
The load is more evenly distributed as theres another axle. The tandem wiill have a lower center of gravity, far more stability in crosswinds, softer ride for the boat, and be easier to launch and load due to the lower profile. The only advantages for the single are a slightly lower initial cost, one less axle to maintain, and the ability to back around sharper corners if parking space is an issue.

I have a single with a boat that weighs about 2000lbs, wish I had a tandem. I had two tires blow out, two weeks apart this year. One of them was at 55 mph on the freeway, and let me tell you, that was interesting. They'll also level out some of the bumps on the road, and that's got to reduce abuse on both car and boat.

You can never have to much money, horsepower or wheels on the road!  I would definately go with the tandem if possible for all the above mentioned reasons.

It all depends on the size and weight of your boat, the tandom on a 16' boat would be over kill. But for over 18' it is worth the money, have you looked at Baker Trailers (if the boat is a sled). They are a pretty impressive trailer, you should check them out.
