Hello, I recently got a vaccum sealer for my eggs. I froze them first, but a ton of condensation got into the bags and ice crystals formed around them. Do you guys vaccum seal the eggs before freezing or freeze them then vaccum seal. If so how do you do it without getting the ice in the bags. Thanks, Chris.

Get a canning adapter for your sealer. Place the cured eggs in the jar, rub a little vegetable oil around the rubber seal on the lid and seal away. Works great for me. This year as an experiment, I caught two kings on 18 month old eggs.

I cure the eggs and vacuseal them, then just leave them in the frig. I've had eggs that are good for a couple of years.

If you dont freeze before vacu packing you will end up with mush!
One method used is; cure, put in vacu bags, roll top over, put clothes pin on, freeze overnight, take out and vacu pack..

Make sure when you take the eggs out of the freezer you put a small cut in the bag or the pressure will crush them as they thaw

I use the instant seal feature on my machine to end the vacuum cycle and start the sealing process. i also put some borax in with the eggs and that seems to help. This is done before I freeze the eggs.

Freeze them for 24 hrs. with the bag, jar or container open, and then vacuum seal. This allows the moisture to escape so that you won't get ice crystals; if I use the vacuum bags I will put the eggs in a glad ware type disposable container freeze in container then put in vacuum bag for vacuum sealing. ALWAYS CUT THE SEAL BEFORE THE EGGS THAW WHEN YOU TAKE THEM OUT TO USE.

First of all you lower the pressuer on your vacum sealer to about 12 lbs, then you wrap your eggs in a layer of paper towels and put them in your vacum bags and then seal them. If your eggs are turning into mush or crushing under that light pressure your cure sucks and you better get a different one. I have been curing and packing eggs for years and do about 400 lbs a year for myself and have great success with this method.

Cure eggs.........roll in borax.........put in vacuum bag.........freeze overnight.........seal in the morning first thing.

This works great for me. If I don't use all the eggs on a trip, i just freeze and reseal again for use next time. I've used eggs almost a year old that look like they were cured a week ago.

Agree with SuperFly, have been vaccum sealing for many years with very good results.

Do them the following way and you'll not have a problem:

1. Cure your eggs---can use any 1 of the many that can be found by doing a search of "egg curing". My baits are cut into the size that I like to use at this step.

2. This is the important step----drain the eggs of all the "egg curing juice". Then allow the eggs to "air dry" for 24 - 48 hours. I have the luxury of having a "another frig", that makes the air drying easy BUT have friends that just use screening and do the air dry process "outside".....They won't turn bad on you in 24 - 48 hrs.

3. The eggs will be "tacky" but not that gooey mess that I had for yrs. putting them in jars.

4. Food Saver Vaccum Sealer 1075 is the model I have now. I cut my vaccum bags on the large size, then take the "tacky eggs" and put in bag. Trying to "guess" how many eggs I'll use in a day is tough to do......BUT, if you cut your bags large enough, you can "re-seal"

5. No more jars to try and seal, did the match bit for 25+ yrs. also tried the "special attachment" for vaccum sealing jars, ugh that was a pain in the butt. No more broken jars, canning lids to buy, or jars to wash.

6. I freeze 80% of my eggs. Love the way you can stack them in the freezer.

7. Take out of freezer, the night before and you'll be ready to fish the next morning.

Thank you guys for all the responses, this has surely helped. Only thing I need to do is get some more roe smile . Unfornately I got the ice crystals on a bunch of brown roe which is treated as gold here, but you gotta learn from your mistakes. I will surely put these tips into action. Thanks.
