My fillets stick to the racks after smoking in my Little Chief. I've done the Pam thing and that's works fine if the racks are clean, but I'm lazy and don't like to do much more than knock the big stuff off the racks with a wire brush, and I'm right back at it. The problem with not cleaning the racks each time is that the fillets stick to the racks, so I made this tool to remove the fillets....it works great. I just hook the stainless steel hook around the rack rods one at a time and pull...the fillet falls right off without losing any skin and without cracking the freshly smoked fish. thumbs

I take a paper grocery bag and cut a piece to size, and place it under each chunk of fish going into the smoker. When smoking is complete, the skin will have adhered to the paper and you pull the paper and skin off all in one piece.

Works great for avoiding the sticky grill problem and lets you remove and discard the skin with ease.

I don't wash mine anymore. Just put them in my gas barbecue and burn them clean. Then wire brush them. Real easy.

Spray vegetable oil on the skin as well as the racks and the fish will fall off.
