Well did a search and came up empty handed, can remember a thread reagarding this but can't find it. Anyways, I'm havaing a hard time vaccum sealing my eggs. Well its easy to do, however prior to sealing the bag I have to freeze them or they will be crushed if I seal them un thawed. The problem is when freezing condensation gets into the bag and forms ice crystals. What can I do to stop this from happening? The eggs thaw out and fish ok but think they could be better if the ice crystals weren't in the bag. Thanks, Chris.

Chris,

Cure your eggs. When ready to bag, stick them in the freezer for about half hour. Then seal them. They should be firm enough to vacuum out the air. If you are packing raw eggs, put them in the freezer for about a half hour, then pack them, but be careful you don't crush them. You may not get all the air out before you have to seal the bag. Should work for you.

Have fun and keep the egg juice out of the vacuum packer?

i vacuum my nonfrozen cured egg but i use the "instant seal" button as soon as the first egg gets crushed. I also put borax/egg cure in with the eggs and that seems to help minimize crushing them.

go to your local dollar store, buy some tupperware type containers, put eggs inside then vacuum seal them. wont crush eggs, leave extra bag hanging so that you can open and re-seal bag.

Be sure to open the vacume bag when you take out the eggs, as the vacume will crush the eggs when they thaw.

I will put in 0.5-1.0 cup of borax into the bag that I am going to freeze my cured eggs in, then drop in the egg clusters, or partial skiens, shake well, and toss in the freezer overnight.

Next I will take the frozen eggs out and seal, no worries about crushing. Other comments about cutting the bag prior to thawing are correct, unless you want chum.

Roll the skeins up in the blue shop towels and put them in the vacuum bag. When you seal it, you will pop some eggs, that is good, it will soak into the towels and seal the skein in juice. This will keep them from freezer burn. Been using eggs I froze in 2000 and they are perfect. I just take them out, thaw them still under vacuum and then give them a light rinse and rack them until they are the firmness I want.
