I read it on here before but dont recall what they are...

been getting a couple springers here and there that are infested with those white pellets...

What are they and are they safe to eat?

We see a lot of those in fall fish. There is an article on the WDFG website that explains what they are and that they are not harmful to humans. I usually just remove them with that small section of the fish if I see any.

Could be either Henneguya spp. or Kudoa spp. Both are myxozoan parasites.

Henneguya forms yellow or white cysts about the size of a grain of rice. Usually don't affect the flavor, texture, or safety of the meat but they don't look to attractive.

Kudoa forms white cysts, too, that can be large patches or streaks in the meat. After the death of the fish, the parasites release an enzyme that breaks down the muscle tissue and causes the flesh to become soft. It is fairly heat stable and may continue to breakdown tissue even if the meat is smoked.

From 2005:

I found a few of those in one of the B-10 kings I filleted this weekend. Unlike the gooey Tapioca disease, these were more solid, and shaped very much like a chicken egg... only they were just 3/8ths inch in the longest dimension. I found them in the "shoulder" section of the fish close to the spine. Just squeezed them like a pumpkin seed and they popped out of the flesh whole. Fish cooked up just fine. Tapioca disease causes proteolysis of the muscle fibers even after cooking/smoking, leaving wet liquefied pockets in the meat.... YUCK!

I have allways called those mother-in-law pellets. Any fish that has them, goes straight to my MIL. She's still living, so I assume they are fine for consumption.
