Propane should only be used to brew beer and heat drift boats...

That said, my best smoker is my 1970 vintage little chief with the old plate style element... I Wish I could find those again... it takes longer to smoke but hot-damn does the fish come out moist

I've gotta add to this, and say that I always thought the same...but I ended up by crook or by hook with the same Old Country smoker in the ad, and I'm kinda liking it, quite a bit. It holds six average sized coho or winter runs (my usual smoking fodder), I don't have to refill the chip tray, and I can run it down as low as 180 degrees, which is my preferred smoking temperature.

I guess so far as that smoker goes, I'm a propane convert...and I can rack it up a few degrees to do half turkeys and beef or venison, too, and it does it just fine.

The best smoker I've ever had was a homemade model, made out of an old steel fridge and a hot plate...but it became a bit unwieldy to move around, and I was moving around quite a bit for a few years, so I gave it away...still regret that move.

Some day I'd like to build myself a cedar cold smokehouse...now that would be the $hit.

I had 2 little chief smokers, well shared them with my brother inlaw. They were completely different one ran hot one ran cooler. They both smoked fish just fine. The smoker I have now is stainless steel from Costco. I bought it a few years back. it is finally getting broken in. Had a hard time getting the temp down. I have it figured out now and it smokes just fine. Even with that I think I would like to build one this summer up on the island. Anyone have a workable design?

Dear Mr. FeelsHead-

Never mention Camilla, EVER.

While EP admires the smoker, it is not in his kingly princely budget. The company EP worked for closed one of it's stores last month and closed EP's department right before Thanksgiving. Merry Fvcking Christmas! grin EP is now planning many fishing trips around his job searches and hopes to steal the title from another illustrious board member of "Professional Native Steelhead Fisherman." wink EP is more worried about his friends since it looks like the company as a whole is going under frown

began with the original little chief, used it until the salt just ate it up. bought another, still have it and use it when the big chief is stuffed. Grabbed up an old metal fridge and discovered that the big chief fits right inside. Removed the door seal on the fridge and waalaah. I don't think I'll be buying anything more trendy while this configuration is around. And if I move, Todd, I'll take the fridge with me.

I used to use the chiefs but you can't control the temp with an electric like you can with propane. Some meats, like pulled pork, I like to start off slow to impart the smoke then turn it up to about 225 to get that fat slowly melting.

I think I still have an old little chief style in the garage only it was made by Pop Gear. Must be 30 or 40 years old.

You never know when you might need that stuff. Like some sort of fastener or screw. Might come in handy some day.

Oh oh.....it's broken....good think I saved that fastener from 1969 otherwise I'd be running to the hardware store and spending 50 cents. Now where did I put that?
