...can't remember the recipe. Is it just boil cubes of halibut in salted 7-Up or Sprite until they float?

I've always used sugar in boiling water. I can't remember off hand, but I think I always used 4 cups of water and 1 cup sugar.

I have always done this recipe/method with cabezon. It is a really dense meat, and their main diet is guess what... small crabs. You are what you eat, and cabezon have a naturally "crabby" nature and taste to them.

I always use 2 cups of sugar and a cup of salt.To 2 quarts of water.Cut the fish into 1/4 inch thick strips.Slowly bring the water, sugar, salt ,mixture to a boil dissolving it as much as possible.

Drop the fish in.When it floats its done.Probably less than a minute.Dip in garlic butter and enjoy!

Todd showed me this same thing with cabezon. I've done it with sprite, 7-up, etc. Usually dip the chunks in a soy/wasabi mix. Yum.
