Anyone have any good ones worth sharing?

Did 2 jars of cauliflower & carrots, 4 green beans, 12 cucumbers.

Still have plenty left.

Experimented last weekended with some green mango. Pickled some up with spicy peppers/garlic/onion in a light salt brine. They tasted great going in the jar, we'll see what they're like tomorrow after they've sat for the week.

I use this recipie, except I add red peppers and don't process in the steam bath, makes em mushy. If you soak em in ice water forva couple hours the raw pack them, they will be crispy right out of the fridge!!
