I like to take out the anti-reverse in my baitcast, so that the only drag is my thumb, and I can free spool for long drifts. Are there any reels that have this built in? For a left handed model, but not quantum.
Most reels are not made to perform like this and wear out eventually.

You can remove the the anti-reverse dog on Ambassadeurs and some of the older Shimanos like the Bantam 251 have a switch that takes out the anti-reverse dog and they are left handed. You may also want to try the Ambassaduer 4000D or 5000D they are direct drive reels and a lot of fun to fish with, but are hard to find. I have seen some on the EBAY auction
