Some cool ideas in here. I've also never liked dehydrated chanterelles. Back when I knew where to find them, I sautéed them in red wine, shallots, garlic, and olive oil, then froze them in meal-size portions. This flavor is versatile and easily enhanced for various applications, and you can just thaw them out as needed. Not as good as fresh, but close.

I've tried drying them and like stated above the best use of those is the broth for soups, stews, braises, sauces, or rice. Last year I gave them a quick sauté till they released their liquor. I then froze them in small batches in the liquor. They are chewy and not worth it. This year Ive eaten them all fresh so far and plan to try pickling them too.

I'm not much of a mushroom picker but I will add that fresh King Bolete's fried with fresh backstraps may be the worlds greatest backcountry meal.

I have tried vacuum sealing and freezing Chantrelles with varying success, however, there is a warning against vacuum sealing mushrooms in that anaerobic bacteria can form. This year I plan to saute in butter and then freeze, because they're just gonna end up in butter anyways. So far this year my honey hole produced, but not as well as last year.
