Well I have 8 limits of clams and very little frezzer space so i am looking for canning instructions. I want to pressure cook the clams in wide mouth pint jars. My grandmother says she uses a hot water bath for 120 minutes but I am not sure how safe that is. So for you canning folks. How many minutes and what pressure for minced clams in a pint jar?

I can fish in half-pints instead of pints, but my instructions for pints are 90 minutes at 15 pounds pressure.
Everything I read and hear about razor clams describes cooking them hot and fast so that they remain tender. I'm not sure, but pressure cooking them may turn a premium product into a mediocre one. You might do better giving some clams to a friend who has some freezer space to share instead of canning them. You can always buy canned clams if you need them.

Learned my lesson years ago.
NEVER freeze razor clams.
A premium product goes in.... and a dehydrated, leathery by-product comes out.
Dig only what you will consume FRESH... or share the excess spoils FRESH with some very fortunate friends.
