i just smoked up a batch of silvers, but used mesquite wood instead of alder. It turned out great! i recomond it to anyone who wants something differant. if anyone else has had an experiance with smoking fish other then alder or mesquite , please tell me the outcome.

I had my smoker going 3 days last week & used apple. I guess I just go with what has worked before. Everyone likes it

I have used hickory, mesquite, and alder they all work well. For salmon I prefer the hickory or alder although I have used mesquite on salmon. I like mesquite when I make venison or elk jerky. Heck when I used to live in Arizona we would just gather mesquite for firewood when out hunting it was everywhere. Nothing like a good steak cooked over a mesquite fire. Mmmmm Mmmmm good.

Try a dry brine like 1/2 cup kosher salt to 2lb dark brown sugar.Layer fish / brine / fish / brine until used up.Brine 24 hours,light rinse then smoke with cherry wood.Gives it a real nice reddish brown look with a good flavor.

the hardest part is keeping the papers dry....

...and I've heard that all it does is give you a headache.

The banana peels and cat nip are the worst for the headache's.Good luck,
