How to make Chinerky

First catch a Chinerk - this one will do -


I like to use the front part of the filet


Cut in to 3/8 - 1/2" strips


Gather up ingredients for Brine

1/2 batch of Granny's brine
8 cups water . Start with 6 cups hottest tap water
add 1/2 - 3/4 cup salt
3 tbsp garlic powder
3 tbsp onion powder
1 cup brown sugar
1/2 cup Karo corn syrup
4 tbsp Mapeline

Mix it up good. I like to use a cooler


Add fish and other 2 cups of water in frozen form


Tomorrow or the next day ( be sure to add more ice) drain off brine


Do you have the plastic smoker racks? No? Get them. Spray each one as you go


Rack it up and pepper. I like cracked black pepper, some with Cayenne. Red Pepper works too.


Time for the Smoker. Be sure not to burn hole in deck. Use ceramic tiles under Smoker


Smoke until it is hard to the touch. Rotate racks. Sampling recommended
