Most years, I do pretty well catching crab. In fact, the family is usually sick of eating crab by the time winter season rolls around and I was wondering if you folks had any recommendations for long term storage. I've done the pick-all-the-meat-then-freeeze-in-plastic-bag routine but I also have a pressure canner. Anyone ever tried that with crab?

Freeze in small zip locks, then vacuum pack. Comes out just like fresh!

Does your method really work on freezing crab? just vacuum packing then freezing does not. So you put the crab in ziplocks, freeze them. Take them out of the freezer, vacuum pack the frozen baggies, then back in the freezer?

Nothing comes out of the freezer the same as it went in... especially something as delicate as crab... the texture and flavor is just not the same after it is frozen...

if you freeze it, it can be used within a week and be nearly as good as fresh or just plan on cooking it in enchiladas, jambalaya, deep fried cakes, omelets or pasta.
