I am hunting quail in the Arizona desert with several friends who are all Montana fishing guides.

Tonight we are having a delicacy, or so they tell me. Bergoo. it seems like it is pretty much a what you got Stew. Our version will have mule deer, quail, Cottontail and I believe some pork as well. Plus quite a variety of vegetables including potatoes, carrots, lima beans, okra and tomatoes. Part of the liquid is Guinness Ale. I will give you my opinion of bergoo later

Bergoo traditionally is an Appalachian "dish" which consists of what didn't make it across the road the night before, typically scrambled with eggs. One of the main ingredients is squirrels, specifically squirrel brains. There is a higher rate of prion disease (Cruetzfeld-Jakob disease) associated with the consumption of brains. Sounds like the Arizona version might be a little tastier and definately safer.
