So I'm thinking of getting into this. I have been checking out the UMAI curing bags and some other products for making capicola and salami. Anyone have vast experience and knowledge you would care to share? I watched some youtube videos and some of that stuff looked amazing.

I recommend soaking your meat in cider.

Not sure if you have ever tried cured smoked pork chops? Some meat shops sell them. I have a whole pork loin I'm curing up right now, a 14 day brine cure. My 1st try. I will be taking it out to dry tomorrow and smoke cook it Sunday. The chops I've have had from Stewart's Meats in Mckenna/Yelm are to die for!
