One of my standby's for feeding a lot of people. Is great pre made and then heated in a crockpot. I have enjoyed this recipe many times in the Husky parking lot. Pretty much the only way I get invited to a tailgate party smile

This is an especially good recipe for "Barn Door's" as it breaks down the tougher cuts of Halibut.

If using fresh oysters make sure to keep the oyster sauce when shucking and then add in place of the white wine. I also don't add oysters until just before serving. I'll blanch the oysters in boiling water just until the gills begin to curl and then dump in ice water to stop the cooking process. Don't want chewy oysters wink

Manhattan Fish/Clam Chowder


6 slices bacon cut in 1” cubes
¾ cups onion sliced
2 tbsp garlic minced
1 cup clam juice
1 cup wine
1 16 oz can diced tomato
1 8 oz can tomato sauce
1 tsp black pepper
1 tsp rosemary
2 bay leaves
2 tbsp pepper sauce
2 cups raw potatoes diced
½ cup celery diced
1 lb cubed fish or clams or oysters
2 tsp Worcestershire sauce
1 tsp thyme

Sauté bacon, onion and garlic in large pot until onion is limp and bacon begins to cook down. Drain fat. Add clam juice, wine, diced tomatoes, tomato sauce, pepper, thyme, rosemary, Bay leaves, pepper sauce and Worcestershire sauce. Simmer 20 minutes. Add potatoes and Celery. Cook 20 minutes on medium heat stirring occasionally. Stir in fish/clams and cook additional 10 minutes.
