try this recipe I think you will like it,its the only brine my family has used for the last 30 years .

2/3 cup Brown sugar
1/3 cup soy sauce
1/3 cup lemon juice
2tsp Garlic powder
3tbls white sugar
1 1/2 tsp accent
pepper to taste soak 8 to 10 hrs in bowl turn pieces(rotate bottom to top) every couple hours pat dry or air dry for an hour should take around 5 to 6 pans of smoke .RJ
