This thread was on last week and I tried the rock salt/brown sugar receipe that was posted. My fish turned out great! Someone also mentioned rubbing honey on the fish after you remove it from the brine and rinse. I gave that a try as well and it too turned out good. A little sweet, but good.

It was 6 parts rock salt to 1 part b.sugar, and brine time was short, like 2-4 hours. I left my thick pieces in for about 3 hours, (frozen fish) and that was just about right. Although the thinner sections were a bit salty.

Bonus was that it is almost too easy.
