this is a dry brine.

1 cup sugar
1 cup brown sugar
1/4 - 1/2 cup non iodized salt

optional adders

rosemary
basil
dryed pepper
teriyaki dry mix


mix and cover Hali for min of 4 hours, it will turn into a thick gooey mix. Overnite is ok.

Rinse of with water and let glaze in the fridge for 4 hours and then smoke.
