Wow!, friend of mine up here in B'ham had a beautiful loin of California yellowtail (or at least that's what he thought it was), (a friend caught it on a charter down South somewhere). Anyhow, the fish was pan seered both sides for about a minute and a half each, and then consumed. Almost raw in the middle. I have to admit, that is the best fish I've ever had in my life. The texture was like the most tender steak ever.

My question is, does Albocore taste this good if properly prepared, and where is the nearest yellowtail charter?
