In a pot:
add 1.5 to 2 pounds yellow onions thin sliced. (not the sweet ones).
Cook slowly, med heat, in 3 tbl butter and 1 tbl extra virgin olive oil for 15 minutes while covered (may take longer for you but the goal is to coat and soften the onions)
uncover and raise to med high heat
add 1 tsp salt and 1/4 tsp sugar
cook for 30 to 40 mins stirring occasionally until brown/carmalized
add 3 tbl flour and stir for 3 mins (should become like glue)
add 2 quarts beef broth, 1/2 cup white wine, salt/pepper
Bring to a boil and then simmer
adjust salt and pepper to taste
before serving add 3 tbl cogniac
dish into bowls, add toasted bread or croutons and comte or gruyere cheese.
Melt under the broiler.
