Sunday saw Gartner's Ribs on the barby.
I believe that Gartner's is the best butcher shop in Portland.
One of their many, unique items are their marinated, beef shortribs.
These are cross-cut from meaty very high quality beef ribs, about a 1/4" thick and come soaking in a secret, tangy, mysterious marinade.
These are the Gold Standard of fast-grilling, BBQ ribs.
If you bring these home to friends family, you will be instantly forgiven for any past digressions and promptly elevated to hero status if not already there.
I've been trying to crack the code on this secret marinade and I'm only about 80% there.
It's great fun making up your own special sauce.

Noteworthy that it uses a dry rub mixed into the sauce....I need to experiment with that.

The first time I tasted Gartner"s Ribs was at a streamside dinner on Oregon's Deschutes River in '96
They're greasy, make a mess of your grill but they're oh so good.
