Here are some Memphis-style ribs at hour 3...



The basic recipe is from Malcolm Reed @ howtobbqright.
The rub is mine.
Ribs are Safeway Select Pork Loin Back Ribs that go on special for 2.49 from time to time.
Shown are two racks that have been cut in half.
Weber 22.5 with Stubbs briqs and hickory smokewood @ 225F

Memphis-style does not use a heavy slather of sweet sauce.
It's great for a change of pace and sauce lovers can always slather as needed.
It's become my favorite style for pork ribs and it's very easy...no wrapping... just a quick mop every hour.
