i went out and csught 2 humpie's wanted to smoke em any one got some good brien recipies for humpie's i herd they were only good for smoking so any info would help me out confused

1/2 cup salt
1 cup sugar
2 TBSP allspice

Mix it all up real good. Put the fish in a deep baking dish and cover with the brine. Let it sit for 8-10 hours. Take the pieces out of the brine and rinse them off. Arrange them on the smoker grills and let them drip dry for an hour or so. Smoke until they have the consistency you like.

I did some humpy this weekend and it was yummy!

1/3 cup sea salt
1/4 cup honey
1/3 cup soy sauce ( or teriyaki sauce)
1 Tbs crushed red pepper
Mix all together in a large zip-loc bag, add fish (up to 4 filets) close bag and let stand in the fridge for 2-4 hours, turning bag every now and then to make sure all the meat is exposed to the mix.
Remove fish, rinse lightly,or just pat dry with paper towels.
Place on racks in smoker, drizzle with honey, smoke slowly until done to your preference and enjoy!

Humpies make fine eating if they are taken in salt water or in the very lower reaches of the rivers and gutted and iced quickly and cooked within a day or so of being caught. Brushing them with a little olive oil and chopped rosemary or dill before popping them on the grill helps since they aren't as oily as some other salmon. The fact that they aren't as oily as some other salmon makes them one of the poorest choices for smoking.
