I fillet this fish and three others and tossed them all in the brine where they sat for about 24 hours. When I took them out for rinsing and draining I noticed some of those "white nodules" deep in the meat next to the spinal rays on one fish. There was no evidence of them under the skin like I have noticed on two other fish which I didn't keep this year. Any way, I put each of the two affected fillets on their own rack and smoked them to see what the result would be. The pics below show the most gawdawful thing I have EVER seen come out of my smoker! Has anyone ever seen a mess like this before? The fish gets tossed, of course, but I would sure like to know what caused these frightful results. All three other fish smoked up very good.
