"Eating raw or lightly cooked oysters can make you seriously ill. But your chances of getting liver-damaging hepatitis from contaminated raw oysters are dramatically lower if you wash them down with an alcoholic drink, suggests a new study from the Centers for Disease Control in Atlanta."

Yuk on the raw oysters, are you guys nuts? Put them in a cupcake pan one in each little cup cake spot with some butter and garlic bake for 12mins, now that's good eatin. Even those costco ones are good like that, +1 for brady's or lytle's
I just talked to one of the experts. Gimme a couple of days and I'll produce enough papers and studies for you to "digest".
PS. Heard of some interesting correlations between the roto-virus (Norwalk virus) on most/all cruise ship and their commonality with raw oysters.
And yes, hepatitis is very cool.
I just now got the impression that he won't eat a *cooked* oyester, as the cooking process apparently does nothing.
While I will not produce any paperwork/studies on this topic, I would wager that you have a far better chance of getting hepatitis AND consuming human waste at McDonald's.
C'mon Parker, eat raw oysters, all the cool kids are doing it

I should be safe then. I always abide by the CDC's advice and wash down my oysters with an alcoholic beverage. Oysters without beer or wine just wouldn't be right.
Yum, I am sure Parkers paper will include the following. Don't eat raw oysters unless you know the source.
Oyster - Crassostrea spp Ostrea spp Tiostrea spp
Molluscan shellfish (Oysters) – Pathogens of concern include both bacteria and viruses, like hepatitis A, Norwalk virus and Norwalk –like viruses. Pathogens such as Vibrio cholera 01,Vibrio vulnificus,Salmonella spp., Shigella spp., Campylobacter jejuni.

Fuk Parker just harshed my mello. I'll never think of them as anything but poo filters now.
ya ever bbqed a poo filter until the shell popped open scraped it into melted butter, white wine, crushed garlic and fresh lemon juice give it a quick stir and nock it back. then wash it down with a pull off a cold frosty.
I guess that's what they call liven and dieing at the same time. What doesn't kill ya just makes ya stranger....

When we lived by B'ham, we'd buy 25 lb bags of 'bed run' (ungraded)oysters from Blau's on Samish Island and cover them on the bbq until they 'sing' and pop open. Achewter has the right idea.

Grasshopper, he who eats undercooked bbqed oysters will have bowels that "sing" and poop often. Experience speaking. Both my daughter and I have had hurls and squirts from eating oysters not quite ready for prime time. She ate a single bbqed oyster after a sports tournament. All of her teammates and many others, who ate oysters, were sickened, some seriously. The Samish Bay oyster industry took a "time out" while the public health dept. tried to identify the "bug" that had made so many ill. Both of us still eat oysters, but only those that are thoroughly cooked.

No joke.
Always cook your oysters. The days of safely eating raw oysters is a thing of the past.
Than again, if you like eating human waste and other toxins, then be my guest, eat 'em raw.
Thanks Parker. These are for smoking. I boil them in the brine for close to 30 minutes, which pretty well cooks them, then I cold smoke them. It may not get rid of the human waste, but it sure makes it taste good and I have never gotten sick. I love em raw, but now I have second thoughts and you got me thinking about the days back in the late eighties when I used to take the boat down Hood Canal. I anchored the boat off a friends place, rowed in with the dingy and ate oysters raw right off the beach. knowing what I know now about Hood Canal, I can safely say I have eaten a lot of human escrement.
Again guys, I appreciate the info. I have bought oysters in the jar at Costco and they just didn't turn out as good as the ones I picked up from places that specialize in fresh seafood. The last batch I did up a few weeks ago I got from that Oyster place ten miles or so out of Ocean Shores. Those oysters were excellent. I will check out what you suggested, locally.

Now right of the beach is another story. I just wait until the water is cold and the low tides are in the middle of the night. Just about oyster season now!
The only problem I ever had was some fried oysters at a restaurant which caused what can only be described as a violent illness.
