has anybody done it here, I heard that skate is good. I know that you cut the wings with cookie cutters. do you soak the meat in a vinger/lemon juice solution over night. do you skin it. just any info would be cool, very intersted in these. cause I catch them at night alot.

dogfish is eating regulary in europe, do you cook these in batter like a catfish. any info on these would be cool to. Ben

Hey Rock,

I've never eaten either but I hear that you just cut the skate wings off and use either a cookie cutter or a metal pipe with the one end sharpened makiing it like a cookie cutter. Never heard about having to soak it. Just cut, skin and fry it like a scallop. As far as the dogfish go YUCK!!! But if you must, I hear that you need to soak it in (I believe),milk. You need to get all the poisons and toxins out of it.. Maybe someone else knows. I can ask a coworker tomorrow and let you know.. Good Luck...

My grandpa talked me into trying dogfish when I was a kid. There was a pretty decent strip of meat that he'd take from the tail, up to about the first fin. I don't think he did anything special - just fried it up. I never died, and didn't think it was that bad. No bones to worry about (all cartilige). Just don't use your good knife, the skin is very tough and like sand paper.
He also had us eating sculpin (bullheads), moonsnails, and other weird stuff.

Well, if you have ever ate at any fast food or small cheap restraunts they sell skates as imitation Scallops. Louis Kemp sells them as Imitation Scallops.Also Tyson, but not sure in which market(East Coast or Europe?)

I've always been under the impression that the big scallops that sell for cheap in the grocery stores are actually skate.I know that alot of times when you order clamstrips you are actually getting the muscles from sea cucumbers!
Sharks don't urinate like we are used to, but secrete out of there skin.That is where the soakings you hear about come from.I do not know if skate's have that same function or not.I used to catch them off the first street dock there in b-town pushing 5' wing spans.You will play like hell trying to get one in when that big.

Think "Fish & Chips and Scallops"....
I used to fish for Tyson Seafoods before they went under and we kept Skate wings to be sold as scallops overseas.

Skate and Dogfish are eaten all the time, just not by me!

I used to fish off of that same dock when I was alot younger. I haven't been back to Bremerton in 40 years. One time when we were fishing off that dock a guy came down there and was fishing for perch. He hooked up with a ling cod that went at least 40 lbs. It broke his rod as if it was cut off. Yhey used to catch big lings around the Navy yard that long ago.

We caught a monster skate once off Tatoosh Island and kept it, thinking we would have scallops for the rest of the year. After skinning the wings out, the muscle fibers were very thick and tough. A cookie cutter was out of the question. After wrestling around with it for a very long time, we submitted to defeat. Needless to say, we don't keep skate anymore. It was a big waste of a big fish.
Dogfish.....my stepfather was from Dover, Delaware and he would skin and gut them and soak them in water and vinegar. It always smelled like a urinal to me. I made a point of being gone by dinner time. I never did eat it. Yik.

Actually, I have had smoked dogfish before and it was okay. I have heard that the smaller ones are better, under 36". Skate wings are supposed to be pretty good as well, but I might just let it go.

Never had dogfish but skate tastes very good. The only problem is that they are by far, the slimiest thing I've ever delt with. It was so hard to cut the wings off and skin it that I'll probably never do it again.
