Anybody have a really good recipe for Tuna Casserole??

I'm needing to use up some of my frozen Tuna that's filling my freezer. I'm lookin' for somebody's Grandma's secret recipe... something really good or different!

Please don't post any recipes that require adding a can of condensed soup or canned Tuna, Thanks!

Hohbiz - I'm almost through my half of the TUNA. If you need me to work on some of yours, I'm down. I just keep searing it rare w/ sesame oil and serving it w/ soy and wasabi. Then what doesn't get eaten goes on a green salad the next day.

Option 2 sounds good Aunty.

Heres a change up for you
you will need bow tie noodles Mae poy sweet chilli sauce [can be found by soy sauce] red & yellow bell peppers sweet onion mushrooms brown ones tuna and frozen tender peas.
cook noodles and drain theses wont get mushy like egg noodles .in skilet cook peppers onion and mushrooms cook over med heat 5 minutes add tuna cook till med add noodles a little olive oil or butter and the Mae poe sauce go easy with the may poe as it can get hot so check after adding a bit and stirring it through add peas strir til tender and your in.You will be on this like Hobo on a ham sanny.

It's hard for me to imagine anchovies making anything better, except salmon bait. But if you vouch for the Italian, I'll accept it. Every Italian food I've had is fan-fu**ing-tastic!

I like the sounds of yours too, Aunty. How would you modify if the albacore is canned? Since canned fish is already cooked, I don't like to subject it to a lot of heat and over-cook it.

How 'bout a Caesar Salad? Worcestershire Sauce?

...I've got a killer recipe for Fried Zucchini Blossoms that uses goat cheese and a small piece of anchovy. Your tongue would have to be half missing not to like 'em!

I'm not one to eat 'em on pizza, but they add subtle flavors to many dishes that I like. ...never had 'em with tuna, but I'm willing to try!

kk, If your ever in the Portland metro area I got a couple jars of the real stuff for ya, just be warned going back to the cat food they call tuna in the store will be a tough pill to swallow.

Aunty,

I didn't grow up eating tuna casserole. My old man didn't like casseroles or hot dogs. We never had tuna casserole, but I do like albacore; in fact I've got it on my sandwich for today's lunch. I think this thread inspired me. Side note, the only time we got hot dogs as kids was on picnics or when the old man was out of town for work.

I keep wanting to get some fresh albacore at Westport. I'm told that home canned albacore is to store bought stuff what home canned sockeye is to the store bought variety, and I intend to verify that one day.

Years ago you inspired me to can salmon. Bought the pressure cooker and used your method of 15 pounds for 60 minutes- 1/4 tsp salt - per half pint.

Since then, with all the tuna talk, I have graduated to tuna. I use the same method of canning, but alot of people think I'm crazy for only doing 60 minutes.

Double stacked the jars in the cooker last year and was a little concerned about the top layer. Haven't been sick yet.

Scored 2 large frozen at sea tuna last year off a boat in Neah Bay for $50.
6 loins made 32 half pints. $1.17 per jar

Finding fresh tuna has become an annual summer time mission.

Next year, I can all of it.
