All I have ever done with the chum I catch is smoke them. Seems that I always have friends and co-workers that are wanting smoked salmon and the chum are plentiful and easy to catch. If I'm going to cook up the daily catch for dinner, I prefer a silver or king, although I would be up for trying a bright chum.
