Generally speaking, FishGal, the wide-open mouth of the moray usually means it's pissed off and wants you to leave. Just remember that the big green morrays are generally slower and nicer. Those little guys are usually mean as snot, and quick as lightning. I found out the hardway when I tried (and failed) to scratch the chin of this little fellow!
