I have 8 lights in the boat shed, 20'x40', the other two are above the open garage door in the rafters. They throw a good amount of light, so your plan of using 8 lights, plus additional lighting in the work bench areas sounds correct. I have enough plugs to install over 20 lights up to if need be, but that would be serious overkill.
I will probably augment the lighting in the shop a bit, adding a few more lights above my work benches. I also mixed natural light tubes with standard tubes. The natural light tubes threw off an almost blue light, so I toned that down with one of each in each light fixture. $18 for the light fixture, $6 for each set of tubes (buy the 12 pack). Adding more light isn't very expensive. I used the T-8 32 watt fixtures and tubes. I also disn't hardwire them in so that if a balast went bad I could just toss the light and put in a new one.
R-11 on the garage door. R-24 (maybe r-28) on the sidewalls, R-30 something on the ceiling. The insulators did that, so I'm not 100% sure.
