Lots of experience with 1 person boats. 10' Outcast, Skookum, Badcat, Sotar, etc would be perfect. Outcast not the best for anchoring but the others you can anchor and fish out of pretty effectively. Too much rocker on the Outcast causes it to swing wildly in any substantial current. I'm sure someone will come on here and say never anchor such a boat but it's doable and safe if done with some caution.
