Wow!, friend of mine up here in B'ham had a beautiful loin of California yellowtail (or at least that's what he thought it was), (a friend caught it on a charter down South somewhere). Anyhow, the fish was pan seered both sides for about a minute and a half each, and then consumed. Almost raw in the middle. I have to admit, that is the best fish I've ever had in my life. The texture was like the most tender steak ever.

My question is, does Albocore taste this good if properly prepared, and where is the nearest yellowtail charter?

South means way south.. Most are caught off Baja. Its odd. I have caught yellow tail, and they are not tuna. Yellow fin are tuna. Both are outstanding on the table. I agree, the best tasting fish in the sea. Also, a yellow fin ( tuna) fights harder than any other fish I have ever hooked into.. those babys pull. Albacore are a lesser tuna and are mostly canned.

My friend went on a charter for albacore tuna off of Westport. Caught a lot of albacore and he gave me half a fish. I did eat it seared the way you prepared it. Very tasty!

Lots of yellowtail off SoCal into Mexico. great eating fish and lots of fun to catch. I can definitely see canning albacore, but I also love it on the grill. About 5-6 minutes and it's good to go. Most people do cook this stuff too long. THey wait for it to cook through, then take it off the heat. By that time, the center is dried out. Ya gotta get it off the heat while the middle is still pink \:\)
We're hoping to get down to Newport, OR for TUNA! this Friday???????

I've never eaten yellowtail, but I've caught a couple (Puerto Vallarta area) and they do pull like a fish twice their size.

Ahi (yellowfin or bigeye tuna) is GREAT grilled, as hot as you can get it and just getting warm in the middle. I still want to try the pan seared method, sesame encrusted and all.
