I'd say about a week, tops... throw it in the freezer right away if you intend to keep it much longer than that. Remember that vacuum sealing could in some cases create conditions susceptible to botulism by removing the air. Probably really unlikely but it'd be a helluva way to get your name on the 6 o'clock news.

Curious to know how long most folks keep vacuum packed smoked fish around in the fridge? I find that after just a couple weeks the quality starts to drop. Gummy. Others? -Old Chum Not only the quality drops, but the chances of food poisoning rise up to insult your bowels with potentially life threatening illness. Botulism being also a rare possibility. Why chance giving your close friends a case of salmon squirts? Save those old vacumn wrapped fish for the in-laws, and free loading neighbors. Otherwise can your fish or huck the smoked fish in the freezer right away. Most of that coming from improperly cooked or processed home meals. And I'm the one who has to smell your pants when your poop turns to liquid, and the only thing keeping it from running down your legs is your tightie whities. Nothing more sorry looking than a man with gut cramps who can't hold his pooh. Pay attention to how you store and process your fish and I won't have to see you at my work. The percentage of salt in most smoked fish is not enough to preserve it against spoilage. Commercial fish processors use expensive equipement to measure the salt content, and it's not something that can be done at home. Have fun VHawk

After an evening of smoked fish and beer, I always thought that the squirts were a result of to many barley pops. Perhaps I'll have to reconsider.

I agree with Srike Zone and V hawk. Freeze it and eat it within a week after thaw. Warm out of the smoker isn't too bad either !

How long do you freeze your fish? I cleaned out my freezer from last year in July this year. It was great. Soooooooo that's about a year. Is that to long? You think? Or does it matter after freezing? It's vacuumed sealed.

Number one is warm out of the smoker, with fat running down your arm.
Number tow is anytime after thawing a well vacuum packed piece of well smoked fish. I have had it a year old that was great.

i had some smoked pink salmon around July that i ate from two years ago...it was fine...the seal was fine...still tasted great...dont remember getting the squirts..hahaha...c
