Catching a lot of fish out of Clear Lake. Not sure if I am catching Rainbows or Kokanee. What are the disinguishing characteristics besides the rainbows color band?

Kokanee look a lot more silvery and their gums and mouths are a lot softer

Kokanee meat is also pink like Salmon when cooked.
