It's the only way we cook turkey now, I heat the oil to 375 degrees, inject with marinade, cook about 3 minutes per lb. Peanut oil is the only way to go,it doesn't spatter as much and won't burn like the other oils will, I also filter the oil when done and reuse it 5-6 times. My favorite marinade is red tabasco sauce, YEE HAW!
