dude ? mushy fish? this brings us full circle. what kind of fish are you smoking ? how thick are your pieces? how did you salt it? did you let it air dry , perhaps one of the most important steps to good smokin? If that fish was brined in a salt and sugar wet brine you NEED to dry it out or it will bee mushy no matter how long you leave it in the lil chief.
