Mine is really easy and everybody loves it.
Right before bed:
lay fillets in a tub flesh side up
coat flesh with rock salt
layer of wax paper
repeat until tub is full and refridgerate for 8 hrs
rinse all fillets and dry
sprinkle on garlic powder,onion pwdr and peper
Smoke in little or big cheif for 3-4 pans of chips
finish in oven at 150 until done (one to two hrs)
Let cool and vacuum or eat.
